'Mangoes n Creme' Pudding (vegan, sugarfree, gluten free)

Don't be fooled by the naughty sounding title, this pudding is so good and packed full of nutrients + energy you could definitely have it for breakfast or a refreshing dessert.


Ingredients:
3 tbsp chia seeds
1 fresh mango (and some to top it with)
1/3 cup coconut cream
Coconut yoghurt
Fresh mint to garnish

Method:
1. Blend your fresh mango, chia seeds and coconut cream until mixed well.
2. Pour mixture into a glass/jar/bowl and refrigerate overnight. This will give the chia seeds time to expand and soften and give that lovely pudding like texture.
3. Garnish with fresh mango, mint and a dollop of coconut yoghurt

This recipe is for one, however it is very easy to increase quantities and make a few at once, it will keep for a few days and your family and friends will love it!
