High protein gluten free vegan banana split pancakes (phew, what a mouthful!)

  • I feel i've outdone myself on this one.


  • I'll get straight to it. 
  • For your pancakes you need:
    1/4 cup coconut flour
    1/2 cup of non dairy milk (I used almond)
    1 teaspoon vanilla essence
    1/2 teaspoon baking powder
    1/2 teaspoon bi-card soda
    Pinch of salt
    1 large banana
    1 scoop protein powder of choice (I used Body Science Vanilla Vegan Protein Powder) 
    Orgran no egg (natural egg replacer) (link here) (you could also use flax egg/applesauce/chia seeds)
  • Mix all these ingredients up with a hand whisk or blender.
    Cook like you would for any pancake, pour sections of the batter into a pan using coconut oil as your oil on low heat. 2-3 minutes each side or until golden brown. 

Toppings:
Lashings of rice malt syrup
Lashings of melted JTS coconut essence "Cocotella" 
Sliced banana
Sliced strawberries
Coconut yoghurt

and..... GO!
