- I feel i've outdone myself on this one.
- I'll get straight to it.
- For your pancakes you need:
1/4 cup coconut flour
1/2 cup of non dairy milk (I used almond)
1 teaspoon vanilla essence
1/2 teaspoon baking powder
1/2 teaspoon bi-card soda
Pinch of salt
1 large banana
1 scoop protein powder of choice (I used Body Science Vanilla Vegan Protein Powder)
Orgran no egg (natural egg replacer) (link here) (you could also use flax egg/applesauce/chia seeds) - Mix all these ingredients up with a hand whisk or blender.
Cook like you would for any pancake, pour sections of the batter into a pan using coconut oil as your oil on low heat. 2-3 minutes each side or until golden brown.
Toppings:
Lashings of rice malt syrup
Lashings of melted JTS coconut essence "Cocotella"
Lashings of melted JTS coconut essence "Cocotella"
Sliced banana
Sliced strawberries
Coconut yoghurt
Sliced strawberries
Coconut yoghurt
and..... GO!
