Simple sushi





My rice paper roll recipe is already here, but i've decided to expand my asian flavas and attempt sushi, which i've always failed at miserably before! 

Ingredients:
-Nori sheets (I used 4)
-1-2 avocados
-Marinated tofu (you can do this yourself, I cheated and bought teriyaki tofu from the supermarket)
-Mint leaves
-Julienned carrot, capsicum, red cabbage, snow peas
Rice:
-1 cup long grain brown rice
-600ml water
-2 tblsps sushi vinegar
-salt to taste

Special equipment:
*bamboo sushi mat
Combine rice + salted water in large saucepan and bring to boil, stirring occasionally, cover and simmer until water is absorbed into rice (~30 minutes) 
Allow rice to cool (~10 minutes) and stir in sushi vinegar. Divide into 4 portions with a wooden spoon (less sticky than metal!)
Lay nori sheets shiny side down, wet hands and slightly wet the sheet so it becomes a little more flexible
Lay portion of rice on the sheet about 1cm thick in the middle of the nori to about 2cm from the edge
Layer with ingredients (avo, tofu, veggies, mint etc) + use bamboo mat to roll from one side to tuck the nori around the rice and rearrange roll to finish rolling and firmly press mat around sushi so it's nice and compact. Slice into pieces with a sharp knife and serve!
