Rice paper rollin'





So basically, one of my favourite foods is rice paper rolls, so I have kinda become a semi expert rice paper maker, minus the rollin' part. Nonetheless, these babies are too good not to share. 

Ingredients (makes 6 rolls):
-2 medium carrots 
-1/4-1/2 of a capsicum
-handful of snowpeas
-bunch of mint
-half an avocado
-200g firm tofu
-olive oil
-soy sauce
-cashews
-round rice paper sheets

Get a bowl of warm water and slightly wet your rice paper sheets and lay on a tea towel until you're ready to use them and they're nice and sticky and flexible. Julienne all your vegetables. Slice your avo (like pictured). Grill your tofu in a bit of olive oil. 
Place the rice paper (careful!) on a bread board and fill with ingredients- veggies, mint, tofu and cashews. Add a bit of lime or lemon juice and salt if you wish. Fold the sides and the top and bottom. 
That's it. Too easy. 
Serve with soy sauce and sweet chilli.

Super quick and super easy and great to refrigerate and eat later for those moments when you get back from hot yoga late at night and are ravenous and have no idea what to cook or eat so end up a little teary and emotional. We don't want that happening. I learn from my mistakes. Now I'm off to that hot yoga class. Aurevoir babies, enjoy!
