Lamington cake sponge:
1.5 cups gluten free flour
1.5 cups almond meal
1 cup sweetener of choice (coconut sugar, raw sugar, maple syrup, stevia etc)
2 tbsp gluten free baking powder
1 cup coconut milk/almond milk (I did half and half)
3/4 cup chia seeds mixed with 1/3 cup almond milk (allow to set, this acts as your binding agent instead of egg)
1 tbsp vanilla essence or a scraped vanilla bean
1 tsp salt
1/2 cup coconut oil
Bake for approx 30 minutes or until you can skewer it and it comes out clean and allow to cool. Cut into Lamington sized pieces.
Chocolate:
1/2-3/4 cup cacao (depending on consistency)
1 cup coconut oil
1/2 cup maple syrup
Whisk together.
Roll sponge pieces in chocolate, then roll in shredded coconut.
Voila! Enjoy this public holiday and celebrate our beautiful country, but be conscious and remember what and how you're actually celebrating. This is a day of mourning for the first people's of this country- so take a few minutes of this day to read up on its history, recognise the traditional owners of our land and take steps to work towards a positive and more inclusive future for our country. It's also become a national day of slaughter and celebration of dead baby sheep, which really sucks, so bring this to your family bbq instead ✌️
Hi Tess! These look great! What sweetener did you use? I'm somewhat concerned about how the consistency would be affected if I used liquid sweetener versus granulated. Thanks :)
ReplyDeleteHi Hilary I used raw sugar! If you use a liquid sweetener just add a little bit more almond meal to soak it up!
